Persimmon winter bars
3 cups persimmon pulp (large)
|2 Tablespoons Dream Dust|
|1 egg||1 cup dried cranberries|
|½ cup EVOO||1 cup dark chocolate chips|
|1½ cup flour||1 cup chopped almonds|
|1 cup sugar||1/4 cup organic honey|
|1 teaspoon baking soda|
|1 teaspoon salt|
|1 teaspoon Saigon Spice|
Preheat oven to 350 degrees. Mix egg and oil together in a bowl. In another bowl, mix the dry ingredients: flour, sugar, baking soda, salt, Saigon Spice and 1 tablespoon of the Dream Dust (reserve the other tablespoon for the glaze). Add the dry ingredients to the egg and oil, stirring until it is combined. Add in the cranberries, chocolate chips, and almonds; then add persimmons. Pour batter into an un-greased round or square pan.
Bake 350 degrees for 40 minutes. Cool.
While cooling, combine the honey and remaining Dream Dust. When the batter is fully cooled, glaze over the top with a butter knife.
